Veggie Kabobs


This recipe is mostly by-guess-and-by-golly, but these sure were tasty!

Vegetables we used this time:
Small yellow potatoes (washed and boiled for 15 minutes)
Onions
Mushrooms
Cherry tomatoes
Bell Peppers

I've also tried:
Yellow squash
Zucchini
Whole garlic cloves (yum!)
Fennel
Parsnips
Pineapple

Mix and let sit for 10 minutes:
1/3 cup olive oil
3-5 garlic cloves, minced
1 1/2 tablespoons dried thyme
1 1/2 tablespoons dried oregano
1 tablespoon ground rock salt
1/2 tablespoon freshly ground black pepper

Toss vegetables in herb mixture until evenly coated. Arrange on skewers and grill for 10-15 minutes. So easy!

aside from looking totally Idaho style delish, and aside from me actually having the urge to cook for maybe the 3rd time in my life, i LOVE that you get to "arrange" them on the skewers, makes it feel like I would get to DESIGN them... FUN!

You could go for a monochromatic look, or maybe you cut them all into the same shape, or put only one kind of veggie on each skewer with slices of it on each end and one whole version of the veggie in the middle for dramatic effect... the possibilities are endless!
